Lime and Grapefruit "fondant"

These are really nice. We think that the grapefruit is bitter, but not at all, it will be the sweetnest of the two.

ingredients:

For the dough (if you want it thick, if not, directly divide the quantities by 2)

- 250g of flour (175g)
- 125g butter (65g)
- 60g sugar (30g)
- 1 egg yolk

For lime mix:

- 100 ml of lime juice
- 2 eggs
- 30g flour
- 100g sugar
- A few drops of green coloring

For Grapefruit mix:

- 100 ml of grapefruit juice
- 2 eggs
- 30g flour
- 100g sugar
- A few drops of red dye

If you want to do one or the other, not two, just double or divide the quantities of the dough into 2 (however, keep the yolk in the recipe)


Recipe:

For pastry:

- Preheat oven to 180 degrees.

- Put the flour and butter in a bowl. crush the butter with the flour until completely absorbed in this one.

- Add the icing sugar and egg yolk and mix.

- Put the mixture in chosen molds and the mix.

- Bake for 20/25 min or until the mixture is golden.

Prepare mix

- Put the flour and sugar in a bowl and stir with a whisk.

- Add the eggs one by one, beating well after each.

- Put the lime juice (or grapefruit) and mix. Add a few drops of food coloring.

Reproduce the second juice

- Put the liquid in the batter and bake for 15/20min.


- Let cool completely before removing from pan and cut. Yes w'll have to be patient :)

You can add zest in the mix. According to the deco, you can put a little icing sugar, or even a slice of lemon.
