Lime and Grapefruit "fondant"

These are really nice. We think that the grapefruit is bitter, but not at all, it will be the sweetnest of the two.

ingredients:

For the dough (if you want it thick, if not, directly divide the quantities by 2)

- 250g of flour (175g)
- 125g butter (65g)
- 60g sugar (30g)
- 1 egg yolk

For lime mix:

- 100 ml of lime juice
- 2 eggs
- 30g flour
- 100g sugar
- A few drops of green coloring

For Grapefruit mix:

- 100 ml of grapefruit juice
- 2 eggs
- 30g flour
- 100g sugar
- A few drops of red dye

If you want to do one or the other, not two, just double or divide the quantities of the dough into 2 (however, keep the yolk in the recipe)


Recipe:

For pastry:

- Preheat oven to 180 degrees.

- Put the flour and butter in a bowl. crush the butter with the flour until completely absorbed in this one.

- Add the icing sugar and egg yolk and mix.

- Put the mixture in chosen molds and the mix.

- Bake for 20/25 min or until the mixture is golden.

Prepare mix

- Put the flour and sugar in a bowl and stir with a whisk.

- Add the eggs one by one, beating well after each.

- Put the lime juice (or grapefruit) and mix. Add a few drops of food coloring.

Reproduce the second juice

- Put the liquid in the batter and bake for 15/20min.


- Let cool completely before removing from pan and cut. Yes w'll have to be patient :)

You can add zest in the mix. According to the deco, you can put a little icing sugar, or even a slice of lemon.

Chorizo and cheddar scones

Give me four ingredients and I make you scones. Simple but efficient. A very nice little recipe that will delight your guests during your cocktail or yourself at a party or in watching TV with a small salad.

Ingredients:

- 450g flour
- 350 ml milk
- A half teaspoon baking powder
- 20 ml lemon juice
- 150g of Cheddar
- 85g Chorizo

Recipe:


- Put the lemon juice in milk.

- Put the flour and baking powder into a bowl.

- Cut the chorizo into pieces and grate the cheese (or cut it into pieces according to your preferences) and then add them into the flour.

- Make an hole in the flour and add half of milk. Start mixing with your fingers making circles.

- Add the remaining milk little by little until it makes a soft but not sticky dough. If it is too sticky, add a little flour.

- Put a little flour on the work surface and form a ball with the dough. Then form a "sausage" and cut into 12 equal pieces.

- Preheat oven to 200 degrees and bake for 10 to 15 minutes, remove from the oven when they are golden.

I'm impatient, so I hurried to tried those at the exits of the oven. I then let them cool. Well, I think they are much better cold. So be a little patient.

Bakwell Tart

Bakewell Tart. A bit like the tarte tatin in France, a mistake. But sometimes, error are giving very pretty things. Almonds and jam. Yum

Ingredients:

- A shortbread dough (recipe here)

- 125g butter
- 50g icing sugar
- 50g sugar
- 125g ground almonds
- 4 tablespoons almond extract
- 30g flour
- 3 eggs

- A jar of jam (flavor of your choice, I used strawberry)

Recipe:

- Make the pastry following the recipe. Then let stand in the fridge time to prepare the rest.

- Mix the butter and sugars together until the mixture smooth.

- Add the eggs one by one, mix between each.

- While continuing to mix, add the flour and ground almonds and finally almond extract.

With this recipe, I made 12 mini pies. You can also make a larger one.

- Place dough in molds and then put in the freezer 15 minutes.

- After 15 min, line the bottom of the dough with jam and then cover the mix.

- Preheat oven to 180 degrees and bake for 20/25 mins (less if the pies are in mini format, 10/15 min)

Waffles

This recipe requires waffles maker. At the same time tell me, how to make waffles without one ...

Ingredients:

- 250g flour
- 85g sugar
- 115g butter, melted
- 400 ml milk
- 3 eggs

Recipe:

- Put the flour and sugar in a bowl.

- Form an hole in the middle and put the eggs. Mix well with a whisk.

- Gradually add the butter in 3 times, this will prevent lumps. Then the milk, still three times.

If you find your mix too thick, add milk, but the dough should not be liquid !

- Rest 30 min in the fridge

- Heat the waffle machine and place a ladleful of batter in the center of the device.

Add golden syrup, jam, nutella ... Or nature. Those are absolutely perfect.

Mash, ham and mozzarella croquette

These little beauties are croquettes of mashed potato with an heart of ham and mozzarella. Accompanied by a salad, it's great.

Ingredients for 12 croquettes:

- 600g of potatoes
- 4 egg yolks
- Salt and pepper
- 40g butter

- 1/2 mozzarella
- 1 slice of ham

- Breadcrumbs
- 2 eggs
- Flour

Recipe:

- Peel the potatoes and cook them in boiling water.

- When cooked, make a puree and add the egg yolks, butter, salt and pepper..

- Make it "dry" for 5 min in the microwave. The mash potatoe should be malleable, it will stay sticky but less. Then let cool.

Each microwave have is own power so you have to manage the drying time.

- By the time your puree cools, cut the mozzarella into 12 cubes. Cut ham slice into 2 horizontally and cut 6 strips vertically which should give you 12 strips of ham.

- Put a cube of mozzarella at the end of a strip of ham and roll. Do the same with each strip for 12 "rolls".

- Place in a bowl the flour. In another, bread crumbs and a final 2 eggs you have beaten.

- Once the mash cool, take a little bit of mash in your hand, put a roll in the middle and cover it with mash. Then roll in flour, then in egg, then breadcrumbs. Do 12 croquettes like that.

- Heat oil to 180 degrees in a deep fryer or in a big pan if you don't have any fryer. If you do not have a thermometer to check if your oil is too hot, put some breadcrumbs in your oil and see if it burns or not. (Do not like me who have not checked and have lost three nuggets that have burned in 30 seconds).

- When they looks "golden", take out and put on a serviette to absorbe excess oil.

The croquettes are quite big, 2 croquettes per person will be more than enough. Serve with a salad.

Pate sablee

Well I'm re-using the same picture, but hey, dough is dough :).

Ingredients:

- 250g flour
- 125g butter
- 60g icing sugar
- 1 egg yolk
- 4 tablespoons milk

Recipe:

- Put the flour and butter on a work plan. Crush the butter with your fingers into the flour until completely absorbed.

- Add the icing sugar, egg yolk and milk. Mix well until you can form a ball with the dough.

- Make rest 30 min in the fridge.

Lime curd

Lime ? I soooo love it! So why not a little Lime Curd?

Ingredients:

- 2 limes (which gave me 100ml for those who prefer to directly use the juice)
- 4 yolks
- 50g sugar
- 50g butter

Recipe:

- Melt the butter in a bain marie.

- Add gradually sugar, lemon juice and finally the egg yolks.

- Mix well until mixture thickens.

- Put in a container and refrigerate until the mixture is very cold.

Then you can spread it on scones or what ever you want.

Meringue

Making meringues, is not complicated, just have to wait but once cooked, it's onlyf happiness (or sugar).

Ingredients:

- 2 egg whites
- 50g icing sugar
- 50g sugar
- 1 teaspoon lemon juice

Recipe:

- Preheat oven at 90 degrees.

- Beat the egg whites until hard. Add ,while continuing to beat: lemon juice, powdered sugar and icing sugar.

- Take a piping bag and form meringue. A spoon will be ok if you don't have any piping bag (on my photo, I used a spoon)

- Bake for 2 hours.

For a little more fun, you can add a few drops of colouring food. You can also add flavor to your meringues.

The Whoopie pies made their entry into the culinary culture. But what is it? It's just a small "sandwich". The Amish Mothers used the rest of the chocolate cake batter to make little sandwiches and put it in the bag of their Childrens. And the name ?? Simply the shall of the children when they discovered the "surprise" :)

In honour of my mom, I took HER chocolate cake recipe which I used for my Whoopies.

Ingredients for 15 Whoopies pie:

- 100g dark chocolate
- 75g sugar
- 50g butter
- 2 eggs

- 50g of fluff
- 1 egg white
- 20g butter

Recipe:

- Preheat the oven to 180 degrees.

- Separate the whites from the yolks. Beat the yolks with the sugar.

- Beat egg whites with a pinch of salt until hard.

- Melt the chocolate with the butter then add to egg yolks.

- Gently mix the above mixture with the whites.

- Use a piping bag to make 30 round spaces on a sheet of  baking paper.


- Bake for 10 min.

For the filling.

- Beat the egg whites. Melt the butter.

- Add the butter and fluff with egg whites and beat with an electric beater.

Make Whoopies.

- Use a pipping bag, put the filling on a cake part and then delicately close the sandwich with another cake by turning a little.

The best is to let them rest in the fridge. The interior will be harder and the cake will be nice and moist. So yes you need to  be patient for the best :)

Camembert and potatoes tart

Very simple to do and for those who love cheese, very good!

Ingredients:

- 1 shortcrust dough (recipe here)
- 1 camembert
- 400g of potatoes
- 100g mascarpone
- 10cl of milk
- Salt, pepper, thyme

Recipe:

- Place the potatoes in boiling water and cook (check by planting a knife in it, they should be soft but not to much)

- Put the pastry in a tart pan. Pre-cook the pastry at 180 degrees for 10 minutes

- Meanwhile, mix the mascarpone with the milk, salt and pepper.

- Once cooked, peel the potatoes and cut into slices.

- Put potato slices on the pastry and sprinkle with the "sauce".

- Cut the Camembert into 8 (or 10, the slices will be thinner) and put on the tart.


- Sprinkle with thyme and bake for 20/25 min.

You can add ham or bacon to the recipe or adapt it with another cheese.
